Blueberry Superfood Oatmeal Bowl {GF, DF}

So I’ve been a little MIA. But I’m back!!!!

I took some time to really fine tune my direction in order to make sure my message and actions were aligned with my long term vision, passions, and mission. Especially with my business, including this blog.

After emerging from hibernation, I’ve got some SUPER exciting things coming up. Alrighty, let’s switch gears. Today I  got an easy breakfast bowl for you because I know that smoothies aren’t everyones cup of tea every single day. This Blueberry Superfood Oatmeal Bowl is protein-packed, FAST, gluten and dairy-free, will keep you feeling full for hours, and uber healthy for you.

Walnuts, hemp hearts, oatmeal and blueberries, OH MY!

Walnuts are a great source of the healthy omega 3 fats, which are known to support brain health, weight loss, hormonal balance, decrease inflammation, and help curb cravings.

The hemp seeds are an easy plant-based protein source that are also high in fiber, minerals, vitamins and healthy fats.

Blueberries are one of my personal fav’s when it comes to superfoods. They’re wonderful for glowing skin, kicking inflammation to the curb, and helping us feel fuller longer.

Blueberry Superfood Oatmeal Bowl

  • Prep Time: 5m
  • Cook Time: 15m
  • Total Time: 20m
  • Serves: 1
  • Yield: 1 serving

Ingredients

  • 1/3 cup gluten-free oats
  • 1/3 cup fresh or frozen blueberries
  • 10 walnut halves
  • 2 tablespoons hemp seeds
  • 1 teaspoon honey or maple syrup(optional)
  • 2/3 cup unsweetened non-dairy milk or water
  • dash of cinnamon(optional)

Instructions

  1. First cook oats. Stovetop:Bring the water or non-dairy milk to boil. Add the oats, reduce heat, and cook 10-20 minutes (depending on the consistency you desire). Stir occasionally. Cover and remove from heat and let stand a few minutes. Microwave: In a large bowl, combine 1/3 cup of oats and a 2/3 cup of non-dairy milk or water. Microwave of high for 1- 2 minutes(depending on your microwave). Stir oats and microwave another 30-60 seconds. Cover and let stand 3-5 minutes.
  2. Top with blueberries, hemp hearts, and walnut halves.
  3. For a little extra oomph, add a dash of cinnamon and a tsp of either maple syrup or honey.
  4. Enjoy!

So here you have it! A fast non-smoothie breakfast that actually tastes good and is good for you.
